Celebrate National Mimosa Day With This Healthier Drink

Here at Cuvée HQ we’re all about the benefits of champagne. After all, it was a happy (champagne) accident that started everything when our founder Rachel Katzman was doused in bubbly on her 21st birthday and discovered her hair never felt or looked better. Bottling the benefits of champagne is our M.O., but we also enjoy drinking it from time to time, too. So, in honor of National Mimosa Day (5/16) and those juicy peaches our partner P.volve helps create with their workouts, we’ve whipped up a refreshing peach mimosa recipe that’s healthier (but no less tasty) than the traditional version.

Rachel’s secret to making a better-for-you mimosa is by using coconut sugar and fresh or frozen peaches to create a puree rather than opting for the caloric and highly sugary orange or peach juices usually used in standard mimosa recipes. Coconut sugar has less fructose and a lower glycemic index than cane sugar, which is important because it keeps insulin levels low. Plus, you’re getting the added antioxidant and vitamin boost from the fruit. Wins all around. So why not kick off a summer brunch with your besties by mixing up this refreshing cocktail? We’ll drink to that!

Healthy Peach Mimosa

Ingredients:

  • ½ cup water
  • 3 tablespoons of coconut sugar
  • 2 sprigs fresh thyme
  • 2 peaches if fresh or 2 cups if frozen
  • Champagne


Directions:

  1. In a small saucepan, combine water, sugar, and sprigs of thyme.
  2. Bring mixture to a boil; lower to a simmer and continue to cook for 5 minutes.
  3. Remove from heat, stir, and completely cool in the refrigerator; about 15 minutes.
  4. Remove sprigs of thyme and pour the syrup into a blender.
  5. Add the peaches; puree mixture until combined and smooth.
  6. Divide the peach mixture evenly between 4 glasses.
  7. Pour champagne into each glass.
